* 1-1/4 c. sugar
* 2 Tbsp. flour
* 4 eggs
* 1 c. evaporated milk
* 1 tsp. vanilla
* dash of nutmeg
* 9 in. pastry crust for pie
* whipped cream, optional
1. Mix sugar and flour in a large bowl. Beat in eggs and milk, mixing to combine; stir in vanilla.
2. Line a 9" pie plate with pastry, crimping edges as desired. Pour custard filling into pie plate. Sprinkle lightly with nutmeg.
3. Bake at 425°F for 10 min. Reduce oven temperature to 350°F and continue baking for 30 min. or until pie tests done (knife inserted in center comes out clean); cool and refrigerate. Pie servings may be topped with a dollop of whipped cream.
