Broiled Pork Chops with Vegetable Medley and Cinnamon Apples

Prep Time: 15 Min. Cook Time: 20 Min. What you need:

+ 4 center cut pork chops, 1-1/4-in. thick
+ salt, to taste + pepper, to taste + 2 c. mixed summer squash, sliced + vinaigrette dressing + 2 tart green apples, cored and sliced into thin rings + 1 Tbsp. butter + 1 Tbsp. brown sugar + 1 tsp. cinnamon What to do:
1. Season chops with salt and pepper. Broil 4 to 5 in. from heat source for 6 to 8 min. per side until internal temperature on a thermometer reads 145°F., followed by a 3-min. rest time. Serve immediately with vegetable medley and cinnamon apples.
Vegetable Medley: 1. Steam summer squash and carrots. Toss with your favorite vinaigrette dressing. Cinnamon Apples: 1. Melt butter in heavy skillet over medium-high heat.
