+ 1 1/2 lb. potatoes, peeled
+ 1 onion, finely chopped + 3/4 c. all-purpose flour + 1 tsp. salt + 1/4 tsp. black pepper + 1 egg + 1/2 c. milk + 1/2 c. vegetable oil What to do:
1. Reserve half the potatoes and set aside. Cut remaining potatoes into large chunks, place in a large saucepan, and cover with cold water.
2. Bring to a boil over high heat. Reduce heat to low and cook 15 to 20 minutes, or until potatoes are tender. Drain and place in a large bowl. Mash potatoes and set aside. 3. Grate reserved potatoes, then stir into mashed potatoes. Add onion, flour, salt, and pepper; mix until well combined. Stir in egg and milk to form a batter. 4. In a large skillet over medium-high heat, heat vegetable oil until hot. Drop batter by tablespoonfuls into hot oil, and cook 3 to 4 minutes on each side, or until browned.
